I know I'm not enlightening anyone with the idea of taco soup, but this recipe is so quick, easy, and absolutely yummy, that I thought I would share.
1 lb. ground beef, cooked*
2 c. water
1 can corn, undrained
1 can kidney beans, undrained
1 can stewed tomatoes, undrained
1 can tomato sauce
1 pkg. taco seasoning
*I always cook & freeze ground beef by the pound when I buy it, so I just take it from the freezer & throw it in the microwave to defrost while I do everything else.
Dump all ingredients into pot. Simmer 20 min. Dish into individual bowls and top with:
tortilla chips
grated cheese
sour cream
Mmmmm...I think I'll make it tonight!

I love this soup!! It is so good. Jordana calls it Cowboy Soup. I don't know why.
